At G. G. Biscotti Co., our artisan biscotti are made in small batches with care, creativity, and a whole lot of family involvement. While you may not see us at the farmer’s markets during January, February, and March, this is one of our most important times of the year.

Winter Is Our Biscotti Development Season

The winter months are when we focus on developing new biscotti flavors for the upcoming 2026 Farmer’s Market season. We test new ingredient combinations, refine classic recipes, and experiment with flavors inspired by the season and our travels. Every biscotti you enjoy starts here—with careful testing and plenty of taste-testing.

Family Time Makes the Best Recipes

Spending time with family is a big part of our process. They help us sample new biscotti flavors, offer honest feedback, and share ideas that often turn into customer favorites. Some of our best-selling biscotti began as conversations around the kitchen table—and we wouldn’t have it any other way.

Finding Inspiration in Texas and Oklahoma

During our off-season, we also travel to Texas and Oklahoma, where we enjoy time with our southern family, explore the outdoors, and recharge creatively. Hiking scenic trails and fly-fishing quiet waters give us space to reflect and gather inspiration that carries into our baking once the markets return.
