As the calendar turns and a new season begins, we’re back in the kitchen preparing for our 2026 biscotti season—and there’s a lot more that goes into it than simply turning on the ovens.

Each year starts with a full restock of our carefully selected ingredients. From rich chocolates to premium nuts and flavorings, we make sure everything meets our standards before a single batch is baked. Then comes one of the most important steps: testing our ovens. Temperature matters when it comes to biscotti, and we take the time to ensure every oven is calibrated just right so each batch bakes evenly and consistently.

Of course, one of our favorite parts of the process happens after our annual Biscotti Break—testing and retesting (and tasting and re-tasting!) the new flavors we’ve been developing. It’s a delicious responsibility, but one we take seriously. Only the very best make it into our lineup, and we can’t wait for you to try what we’ve created this year.

Behind the Scenes Preparation for the 2026 Biscotti Season!

Behind the scenes, we’re also checking every detail that supports the finished product. That means reviewing our packaging, updating and creating nutritional information, and making sure everything is ready for both online orders and in-person sales.

Speaking of in-person—we’re excited to be returning to farmers’ markets this season! You can find us at the Beaver County Farmers’ Market on Saturdays from 10 AM to 1 PM, located behind the courthouse in Beaver, and at the Cranberry Town Square Farmers Market on Fridays from 3 PM to 7 PM in front of the Cranberry Municipal Building in Cranberry Township. We love connecting with our customers face-to-face, and these markets are such a special part of our season.

Getting “Market Ready!”

Getting market-ready means more than just baking. We shine up our display trays, freshen our tablecloths, and make sure our canopy is looking its best so everything feels as inviting as the biscotti tastes.

When it’s finally time to bake, we begin with our six most popular flavors. This helps us confirm that our ovens are performing perfectly and that our techniques are right where they need to be. Once everything is running smoothly, we move on to baking our new flavors—always an exciting moment for us.
